Another is revving its engine and cooking up some eats on wheels here in Vancouver. Marimba, which parks near the Âé¶¹´«Ã½Ó³»Art Gallery, is serving up Veracruz-style Mexican empanadas and tortas (sandwiches).
Just launched, Marimba is serving up the goods Mondays through Saturdays for the daytime eaters, running from 10 am to 4 pm.

On the menu are an assortment of empanadas, which are stuffed pockets made of fried homemade gluten-free corn-based dough, filled with your choice of their three fillings (hibiscus flower and cream cheese; veggies and cheese; pulled pork) and tortas, which are Mexican-style sandwiches, available with pulled pork and refried beans or salmon and bacon.

There's guac for a little extra on the side, and hibiscus water or lemonade to drink.
