The creative behind the craft

The vision behind the patisserie is as impressive as the desserts themselves. Chef Thierry Busset — the café’s namesake and creative force — has spent nearly 15 years mastering the delicate balance of traditional French pastry techniques with bright, local flavours and the finest seasonal ingredients. Since bringing his talents to Vancouver, Chef Thierry has built Thierry Chocolates into an award-winning institution. Chef Thierry’s culinary journey began in the Auvergne region of France, where he trained under master chocolatiers and patissiers, including the renowned Bernard Sicard. His talents later shaped dessert programs in London’s most prestigious three-star Michelin kitchens, including Le Gavroche and The Oak Room. Even Gordon Ramsay — famously hard to impress — once called him “one of the finest pastry chefs in the world.”
